TheTravelsketcher’s Tuesday – Quick pizza

Pizza is a food group. Wood-fired ovens are cathedrals that produce the most divine of offerings.

We often make our own pizza dough, though the tossing of it still evades me. But… what to do when you need more instant gratification? Enter the Indian gift of naan.

I have used both pita bread and naan in the past as a pizza crust, usually with less than stellar results; naan is the best of the two. So though the highly respected chef Nigella Lawson just throws toppings on naan then bakes, I have found a better way – I need more of a crispy bite.

So here is a quick technique that elevates the naan to the realm of pizza crust.

Preheat your oven to 450F. Place the naan, I have been using Trader Joes Plain, on a cookie sheet and bake for 2 minutes, turn it over and bake for 3 minutes – no oil needed.

Then top it with what you like and bake for 5 minutes. Voila you have pizza.

This one has a bit of a Greek flair. I brushed the naan with olive oil then added: tomato, olives, peperoncini, red onion, and feta. unless you are using a sauce you need to brush with olive oil.

How about

  • Pear and gorganzola
  • Fig and prosciutto
  • Tomato sauce and peperoni
  • Cream cheese and smoked trout
  • Anchovies on anything.

Give it a try and let me know how it works out, I even toasted naan in the toaster for breakfast some cream cheese and Trader Joes Garlic salt, which is quite similar to what would be on an everything bagel.

Happy pizza to you all.
